1. A Layout With Two Doors

The best restaurant kitchens have two doors that waitstaff, bussers, and managers can walk through to prevent congestion and mishaps. Ideally, staff can walk in one door with the dish-washing station nearby so that they can drop off dirty plates, glassware, and utensils. The other door should be for leaving the kitchen only so that servers carrying trays of food to be delivered to guests can leave without worrying that they’ll run into someone coming into the kitchen.

2. Cooler, Freezer, and Dry Storage
